Glycine can be used in alcoholic beverages, as an acid corrector (or buffer) during the manufacture of wine and soft beverages, as a taste enhancing food additive, to retain the original color of food products, and as a food sweetener. Also, glycine is used as an antiseptic agent for fish flakes and peanut jams/butter?; as a taste buffering agent in edible salt and vinegar products; in food processing; the brewing process; meat processing; and in soft drink beverage formulas. Glycine is also found in saccharin sodium to remove bitterness. It can play a role in metal chelation and antioxidation, and can be used as a stabilizer for cream, cheese, margarine, and ramen noodles, as well as for the preparation of wheat flour and pig lard. An estimated 10% of the raw material used to make monosodium glutamate includes glycine. Lastly, lysine acts as a Vitamin C stabilizer.
